In the kitchen with Against All Grain | EDITORIAL

I met Danielle over 6 years ago when her and her husband commissioned me to photograph their wedding. Coincidentally, I myself was also getting married just 2 weeks after she was. We because fast friends and spent endless nights planning our weddings together via chat and email. Just a few short weeks after her wedding, Danielle was diagnosed with Ulcerative Colitis, an autoimmune disease that has caused much suffering and many trips to the hospital. Diet has a lot to do with this disease and others like it (Crohn's, Colitis, Celiac, etc.). Rather than sitting around feeling sorry for herself, she has turned her passion for cooking into a way of coping with this disease. This journey has been the driving force behind her creating recipes that are grain-free, gluten-free, free of refined sugars (she uses honey!), and low in lactose. She now shares her recipes and cooking secrets with the world through her blog, Against All Grain.

I personally know a handful of people also suffering with these diseases and I have to say that I am so proud of Danielle, she's fought to get here and I so admire her strength and perseverence. Her recipes are not only creative, but delicious too! I'm not one for "diet" food, but I had a slice of her Chocolate Pudding Pie (pictured below) and I can't wait till for another taste! Danielle has started getting requests for publishing recipes and needed a photograph that shows her genuine and nurturing spirit. I jumped at the opportunity!
